Chocolate Pie Filling

So chocolatey good. This will take you back to childhood. Makes 2 pies.

6 Tbsp. Cocoa 2 C. Sugar 3 Tbsp. Self Rising Flour 2 Tbsp. Corn Starch 3 C. Milk Dash of Salt 6 Egg Yolks 3-4 Tbsp. Butter or Margarine 2 tsp. Vanilla .................For Topping.................. 6 Egg Whites 12 Tbsp. Sugar

Mix sugar, flour, cornstarch, cocoa and salt together. Add Milk and heat through until almost boiling. Add egg yolks after heating them with some of the hot liquid. Keep mixing until the mixture starts to thicken. Add butter, and vanilla and mix until very thick. This will take, for what seems like, forever. Pour into prepared pie crusts and let cool.

Beat egg whites, in a bowl, with a mixer until they become stiff. Continue to mix and add one Tbsp. of sugar at a time. When they are very very stiff, Put the topping on the pies and place in the oven, at about 350-400 degrees, until peaks are brown. Remove from oven and let cool before refrigerating.

The egg whites must have absolutely no egg yolk mixed with them or they will not get stiff.
