Pineapple Crisp

Desserts Level of Difficulty: Easy Different twist on the apple crisp for those of us who don't like cooked apples.

Ingredients:

16 oz can Pineapple Tidbits 2 - 16 oz cans Crushed Pineapple Yellow Cake Mix 1/2 C Brown Sugar 1/2 C Self Rising Flour 1 Lemon, Zested & juiced Margarine 1 C Pecans, Chopped Cinnamon

Mixing Instructions:

Drain pineapple tidbits and one can of crushed pineapples and put into a 9 x 13 baking dish. Pour lemon & zest over pineapple. Mix dry ingredients together and hand sprinkle 3/4 of it over pineapple. Drain last can of crushed pineapple and spread over dry ingredients. Sprinkle remaining dry ingredients over pineapple. Sprinkle with pecans and cinnamon. Dot with margarine all over the top, about every 2".

Cooking Instructions:

Bake at 350 degrees for approx. 40 min.- 1 hour. Shake it a little, if it doesn't jiggle in the middle it's done.

Serving Suggestions:

Serve with cool whip, ice cream or BOTH!  My favorite way is to have it plain. I can taste the pineapple better this way.
